It is generally surmounted by a significant \"tell tale\" motif, with some kind of reference to its owner, such as armorial shields, symbolic elements or, more frequently, related to the dish to be served, such as poultry, shells, crustaceans, fish, hare or wild boar.<br \/>\nInitially used for giving a particular characteristic to the setting of the table, these skewers will, from the 19th century onwards, be simply placed fan-like on the serving platter, with the spike garnished with edible delicacies such as crayfish, lemon, legumes, meatballs, kidney, truffles, etc.<br \/>\n\"H\u00e2telets\" are generally produced in silvered metal, or sometimes in lined silver.
